Castello di Casole – A Timber’s Resort is delighted to announce that its Executive Chef Daniele Sera will be joining acclaimed Italian chefs Giancarlo and Katie Caldesi on Friday 4 and Saturday 5 March 2016 for a special culinary weekend in the UK.

Over the weekend, Chef Daniele will be sharing some of his famous signature dishes through a modern Tuscan-inspired dinner menu to be enjoyed at Caldesi at Campagna in Bray, Berkshire. Guests are invited to indulge in a four-course meal with dishes that include red tuna carpaccio in warm tuna sauce and crispy puntarelle, saffron risotto with pork shin in vernaccia from San Gimignano, and Tiramisu Castello di Casole style with coffee granita and vanilla sauce.

Chef Daniele will also be hosting a special Tuscan Masterclass on Friday 4 March at La Cucina Caldesi cookery school, the only Italian cookery school in London. The class will take participants on a journey into the Tuscan larder as they learn how to select the best produce as well as create delicious dishes. Finally they’ll learn how to plate and present the dishes with precision and flair to the highest restaurant standards.

A native Italian who grew up outside of Genoa, Chef Daniele has 16 years of Executive Chef experience, and has held the top kitchen spot at a number of Italy’s most renowned five-star hotels including Rome’s Hotel Splendide Royal, Grand Hotel Via Veneto, Hotel Regina Baglioni and St. Regis Grand Hotel. Chef Daniele joined Castello di Casole in 2012 and has been leading the culinary programme for the estate’s privately owned Tuscan homes and farmhouses as well as the Hotel’s signature Ristorante Tosca, the casual dining venue Pazzia Pizzeria and the stylish Bar Visconti. Known for his experimental, yet respectful, approach to food, Chef Daniele employs simple and traditional cooking methods and believes in maintaining the integrity of ingredients in order to fully express the flavours.

Giancarlo and Katie met in 1997 and together they created the first ‘Caldesi’ restaurant as a purely Tuscan offering and began making regular trips to Italy to research the Tuscan cuisine and discover new dishes. The couple went on to launch Caffe Caldesi, a less formal regional Italian restaurant and café and in 2005, followed by La Cucina Caldesi, a state of the art cookery school where they run a diverse range of cooking courses for all ages and abilities. The Caldesi’s fourth venture opened in 2007 and is a country style Italian restaurant called Caldesi in Campagna located in the culinary village of Bray, Berkshire.  It is a relaxed restaurant offering rustic Italian cooking inspired by their travels in Italy.

The four-course dinner at Caldesi in Campagna is priced at £55 per person and the Tuscan Masterclass is priced at £110 per person- perfect for food adoring couples.
